Never thaw meat on the kitchen counter. Even while the middle is still frozen, the outside sits in the "danger zone" (4–60 °C) where bacteria multiply fast — perishable food must not be left at room temperature for more than two hours. The three safe methods are fridge, cold water and microwave. General information; follow your local food-safety guidance.

In the fridge — the method food-safety authorities recommend — allow a full day for a normal pack. The USDA rule of thumb is 24 hours per 5 lb (about 2.3 kg), and even a single pound of mince or chicken breast needs a whole day.

In a hurry, use the cold-water method: keep the meat sealed in its bag, submerge it in cold tap water and change the water every 30 minutes. About 450 g thaws in an hour or less; a 1.5–2 kg pack takes 2 to 3 hours. Meat thawed this way must be cooked straight away.
