Touch-dry is not the same as cured: the joint feels solid long before it actually is. Cold or humid workshops slow the whole process down noticeably. Check the label of your specific glue — times vary by product. General information.

For an ordinary, unstressed joint you clamp PVA wood glue for about 30 minutes to 1 hour — after that the glue is touch-dry and the parts hold together if handled gently. Joints that will carry load, such as chair or table frames, should stay clamped for the full 24 hours.

Either way the glue needs a full 24 hours to reach its final strength, so do not put real stress on the joint before then.
